Courgette Patties with Tzaziki Dip. I am a huge courgette (zucchini) fan and especially in summer they taste even better. So I really wanted to use them in my recipes. These crisp little patties are delicious eaten hot with a cool dipping sauce of yoghurt and dill.
Dip them in some home-made vegan tzatziki and you have the perfect summery dish that doesn't take long to make.
Cook them in a bit of oil until they are crisp and brown on each.

These patties are perfect with a peppery arugula salad if you want a light but satisfying dinner. For the tzatziki, place the Greek yogurt, mint and spring onion into a bowl and mix well. To serve, place the courgette ribbons in a pile onto a plate, with the tzatziki spooned over the top. Serve hot patties with tzatziki on the side. To create the Tzatziki sauce (makes one cup): combine ingredients and season with salt and pepper to taste.
