  1. Prepare 2 tbsp of vegetable oil.
  2. You need 1 of large onion, chopped.
  3. You need of large piece ginger, grated.
  4. You need 3 of garlic cloves, finely chopped.
  5. You need 1/2 tsp of turmeric.
  6. You need 1 tsp of ground cumin.
  7. You need 1 tsp of curry powder, or to taste.
  8. You need 227 g of can chopped tomatoes.
  9. You need 1/2 tsp of sugar.
  10. You need 2 of potatoes, cut into chunks.
  11. It's 1 of cauliflower, cut into florets.
  12. You need 1 of small green chilli, halved lengthways.
  13. It's squeeze of lemon juice.
  14. You need handful of coriander, roughly chopped, to serve.
  15. You need 1 can of pizelli and carrots.
  16. Prepare 1 can of sliced mushrooms.

Vegetables Curry step by step

  1. Heat the oil in a saucepan. Cook the onion for 10 mins until soft, then add the ginger, garlic, turmeric, cumin and curry powder. Cook for 1 min more. Stir in the tomatoes and sugar. Add the cauliflower, potatoes and split chilli, seasoning to taste (plus drop the vegetables: mushrooms, pizelli, carrots). Cover with a lid and gently cook for a good 30 mins, stirring occasionally, until the vegetables are tender – add a drop of water if you need to, but it is meant to be a dry curry..
  2. When the vegetables are cooked, remove the chilli, if you like, stir in a squeeze of lemon juice and scatter with coriander. Serve with your choice of Indian bread and a dollop of yogurt..
