Tom's Tiramisu step by step
- make the espresso and add the marsala, let cool until needed..
- split the eggs..
- mix sugar and egg yolks with mixer until light yellow..
- mix in the mascarpone until smooth..
- whip the whipping cream until stiff peaks form, then fold into mascarpone mixture..
- whip the egg whites until stiff peaks form and fold into mascarpone mixture..
- put the sponge fingers or savoiardi in the espresso mixture and make a layer in a dish..
- put half of the mascarpone mixture on top of the drenched sponge fingers..
- add another layer of espresso drenched sponge fingers on top..
- put the remaining mascarpone mixture on top. and garnish with cocoa powder..
