Pork (either the whole hog, the pork shoulder or Boston butt) is barbecued or slow-smoked over a pit until fall-apart tender and then tossed with a tangy vinegar or mustard based barbecue sauce, depending on the region. The combination of sweet and tangy flavors brings out the absolute best in grilled or smoked pork or chicken. This means that it is vinegar and mustard based, as opposed to the ketchup and molasses based sauces of the mid and southwest.
For the pulled pork brine, you'll need water, apple cider, kosher salt, dark brown sugar, some of the dry rub (more on that in a moment), bay leaves, and red pepper flakes. However, there are many more styles of BBQ that are equally delicious, and one of our favorites is this Carolina-style vinegar based sauce that is used as a mop while cooking, and as a finishing sauce. It is tangy, spicy, and sweet.
