  6. Pour the egg mixture over the avocado, being careful not to over fill the pie shell..
  7. Tip: Any extra liquid can be put into a ramikin and cooked as a mini quiche!.
  8. Bake for 35-40 mins, or until a knife inserted near the center comes out clean..
  9. Let stand for 5-10 mins, serve with salsa!.
