Then repeat the standard layering so sauce, tortilla, sauce, and end with a thin layer of sauce and cheese. The tortillas came out soft, beautiful and delicious. Mix the dough by hand until it is very smooth.
If it's crumbly after kneading you've added too much flour. Infact my mother will go a step further and place a Kitchen towel (folded in half) into a gallon sized ziplock bag, this all in the effort to keep the tortillas pliable/soft. I found it easier to use a pastry brush to brush the oil onto the tortilla before cutting it with a pizza cutter.
